Honeycomb Brittle, also known as Honeycomb Toffee, Sponge Toffee, Cinder Toffee and Hokey Pokey, is a treat you and your family will love. You only need four simple ingredients and a candy thermometer. If you’re a fan of the show The Great British Bake Off, you’ve no doubt seen this made and that it may be a little tricky. But if you don’t walk away from the pot, you’ll be fine.
Get ready for a mouthful of goodness!
INGREDIENTS
- 1 ½ cups sugar
- ¼ cup honey (try our Golden Angels Apiary or Quail & Hound Farms honey)
- ¼ cup water
- 1 tablespoon baking soda
DIRECTIONS
First, prepare a 12-by-17-inch rimmed baking sheet with cooking spray or line with silicone mat.
Combine the sugar, honey and water in a heavy-bottom large saucepan.
Bring the mixture to a boil over medium-high heat, stirring contantly.
Reduce to medium heat and continue cooking
Cook, without stirring, until a candy thermometer reaches 300 degrees.
Remove from heat, add baking soda, and stir once with whisk, just until incorporated. The candy brittle bubbles up and grows in volume by about three times its original size. Baking soda causes a chemical reaction giving the brittle its namesake appearance and airy texture.
Gently pour mixture onto a baking sheet — no need to spread with a spatula. Let it cool completely.
Once cooled, break the crunchy candy into pieces and enjoy!
